Our New Magnificent Madeleines

An iconic French pastry, madeleines have a history as rich as their taste and are one of the most celebrated pastries. Made in a scallop shell mold, this traditional pastry is said to have originated in the 18th century – served by a village girl to a Polish monarch in Lorraine who was so impressed by the treat that he named it after her. Three centuries later, madeleines have retained a level of popularity unmatched by most desserts, due to their reputation as simple and tasty unprocessed products.

While classic madeleines contain natural ingredients, not all madeleines are made equal. Traiteur de Paris developed the perfect madeleine, marked by a crisp, golden exterior and a soft, moist interior. The recipe was perfected in Normandy, where Marcel Proust was fed his first madeleines and went on to popularize them through his delightful descriptions in “In Search of Lost Time”.

Normandy is home to several artisan biscuit-makers renowned for their intimate knowledge of the pastry’s recipe. Our decision to have our madeleines produced in Normandy is due to the region’s status as de facto madeleine capital.
