Flammekueche Goat Cheese
This Extra Thin Crust Tart is a typical appetizer from Alsace, France. In Alsace they call it Flammekueche, literally means "with burnt edges". There are restaurants specializing in Flammekueche, in a similar way that America has pizzerias. Traditionally topped with bacon, onion and a creamy fromage blanc, and baked in a wood-fire oven, Flammekueche can be served like a pizza or if you prefer as a cocktail snack.
