Mustard Salmon with Roasted Potatoes and Asparagus

Potatoes:
300-350g potatoes
1 tablespoon olive oil
Salt & pepper

Salmon:
2 salmon fillets (approximately 125g each)
2 tablespoons olive oil
2 tablespoons Clovis honey mustard
1 teaspoon garlic powder
1 teaspoon smoked paprika
Salt & pepper

Asparagus:
12-14 green asparagus spears
1 tablespoon olive oil
Salt & pepper
A few sprigs of fresh thyme
Preheat the oven to 200°C (390°F).
Prepare the Potatoes:

Cut the potatoes into wedges.
Mix with olive oil, salt, and pepper, and spread them on a baking sheet.
Roast in the oven for 30-35 minutes.
Prepare the Salmon:

In a bowl, mix the olive oil, mustard, garlic powder, and smoked paprika. Season with salt and pepper.
Brush the salmon fillets with this mixture.
Prepare the Asparagus:

Trim the ends of the asparagus and peel them if necessary.
Drizzle with olive oil, and season with salt and pepper.
Roast Together:

After the potatoes have roasted for 30-35 minutes, add the asparagus and salmon fillets to the baking sheet.
Roast for an additional 10-12 minutes.
Serve:

Sprinkle with fresh thyme and enjoy!
