Chips de Galettes

1 deep-frozen Buckwheat Crepe (thawed)
2 tbsp olive oil or melted butter
Salt, to taste
1 tsp garlic powder (optional)
1 tsp smoked paprika or chili powder (optional)
1/4 cup grated Parmesan or Gruyère cheese (optional)
Fresh herbs like thyme, rosemary, or parsley (optional)
Preheat the Oven:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Prepare the Puff Pastry:
Roll out the thawed puff pastry sheet on a lightly floured surface. Roll it thin, about 1/8 inch or thinner to achieve a crisp texture. Use a knife or pizza cutter to cut the pastry into small, chip-sized triangles, squares, or rounds.

Season the Pastry Chips:
Brush the cut puff pastry pieces with olive oil or melted butter. Sprinkle with salt, garlic powder, and paprika or chili powder for a bit of spice. For extra crispiness and flavor, sprinkle the grated Parmesan or Gruyère cheese on top.

Bake the Chips:
Place the pastry pieces onto the lined baking sheet, making sure they don't overlap. Bake in the preheated oven for 10-12 minutes, or until the chips are golden brown and crispy.

Cool and Serve:
Let the chips cool for a few minutes on the baking sheet. They will crisp up further as they cool. Garnish with finely chopped fresh herbs if desired.
