Grilled Vegetable Sandwich with Prosciutto
1 WT Ciabatta Bread 6"
1 tsp WT Whole Grain Mustard
1 WT Grilled Eggplant
6 WT Roasted Tomatoes
Balsamic Glaze
3 Fresh Basil leaves
3 Prosciutto slices
1 tsp Basil Pesto
- 1. Preheat oven to 425ºF
- 2. Bake ciabatta for 3-4 minutes. Slice lenthwise.
- 3. Spread whole grain mustard on the bottom slice.
- 4. Add eggplant and drizzle with balsamic glaze.
- 5. Place roasted tomatoes on top of eggplant.
- 6. Add fresh basil.
- 7. Place prosciutto on basil.
- 8. Spread pesto on the top bread slice and place on the sandwich.
